Nachdem wir in der Früh bemerken, dass wir am Vortag in Florenz zwar Butter und Frühstückssaft gekauft, aber kein Brot mitgenommen haben, gibt es zur Abwechslung Müsli. Für die Mittagspause kommen wir pünktlich um 12:15 Uhr in die Fattoria La Vialla. Dort gönnen wir uns das Menü 1 (auf unsere Anfrage unproblematisch vegetarisch), das an eine anständige Brettjause erinnert. Wir bekommen Brot, 12 Monate gereiften Pecorino, jungen Pecorino, Ricotta, dazu dreierlei Brotaufstriche / Saucen (Tomatensalsa, Paprikasalsa und Erdbeersalsa) und Salat. Zum Abschluss gibt es noch einen Kaffee (natürlich ein Espresso – wir sind ja in Italien!), zu dem wir ungewöhnlicher Weise neben (heißer!) Milch und Zucker auch Honig serviert bekommen. After admiring their biodynamic, organic range for many years, Mum and Dad bought me a huge hamper of it for my birthday! Such a treat! The box came lined with straw and you can almost feel the heat of the sun that went into growing the gorgeous olives, tomatoes, olive oils and wines. Such a treat. Tuscany is known for it`s great olive oil, fine wines & splendid food culture. The secrets of Tuscan country cuisine are regional products flavoured with fresh herbs. Around long dinner tables, generations of families gather; like at at the idyllic wine farm “Fattoria La Vialla”. The family estate, which is worth a trip to Italy, grows it`s own organic wine, olive oil and other delicacies. A taste of Tuscany with the “Tomato-Rosemary Foccacia” recipe and “Roasted Red Bell Pepper Pesto” below.

  • 500 g flour
  • 20 g fresh yeast
  • Olive oil (8 tbsp.)

  • 2 tbsp. polenta

Our next vinification destination was Fattoria La Vialla. Much of what we encountered was similar to Pomaio, but it was still interesting and educational, and we tried many wines, including one from earlier in the process (before it was ready) which showed how important the first portion of the aging process is. They offered an impressive array of food, even without serving pasta as a main dish, and I did enjoy trying the different foods (cheeses especially) with the different wines. One of the wines, to me, tasted very noticeably of salmon/fish. Some people agreed with this, but I wonder if it was so strong for me because I had the first pour from the bottle. Some compound(s) could have risen to the top, giving it a different flavor profile. Unfortunately, I did not try any other samples of this wine so I can’t tell if it was just me…

Today was the first warm day and it was time for this year`s hottest summer drink. FROSÉ has been celebrated by trendy bars in Los Angles and New York. The slushy drink made of frozen rosé, strawberries and crushed ice is the best way to cool down. I used a rosé from my favorite organic Italian winery “Fattoria La Vialla”, which produce their wine on a beautiful family estate. The fruity aroma of the refreshing drink made me dream of warm beach days in Bella Italia.

Ingredients

  • Rosé wine
  • 500 g (2 cups) Strawberries
  • Crushed ice
  • 3-4 tbsp. sugar
  • Fresh Mint
  • Optional: Grenadine or Aperitivo Rosato

Arezzo- Rondine

First off, if you want to know more about Rondine, I suggest you check out their website at rondine.org. I will attempt to tell you about their mission, and how it challenged my world view.

Rondine is an activist organization that seeks to inspire change through peace. They take students from conflict zones (Israel/Palestine, Armenia/Azerbaijan, etc.) and bring them together to study and learn about the other side. Through personal interaction and debate, they seek to humanize the conflict, instead of demonizing the other side as propaganda tends to do.

Conflict resolution is embedded within the curriculum at Rondine, but conflict between the sides is inevitable. One of the students there told us, “we cannot avoid what happens.” Tempers inevitably flare, but they seek to meditate the peace process and bring about change. Rondine staff seek to change the perspective of conflicting sides, one voice of reason at a time.

Rondine and the Art Exhibit

This morning we loaded onto a double decker bus and drove to a place called Rondine. It was out in the countryside of Tuscany and had a very beautiful view and an exotic feel to it. When we got there we went into a giant tent to learn about the purpose of Rondine. This organization brings students from opposing conflict zones together in the same place so that they can see their “enemy” face to face and realize that they are an actual person. This program also allows these student to further their education even though their countries are in a state of conflict. It was very cool to see two people whose countries hated each other managing to be friends and see past the cultural lenses their respective societies have placed over them. We got the chance to visit a very unique place on the outskirts of Arezzo called Rondine, an association who refers to themselves as “The Citadel of Peace.”

Rondine takes applications from students who live in areas affected by war and unrest. If accepted to the program, the students’ tuition, fees, and everything except normal living expenses is completely paid for, and they live in the community of Rondine while taking classes at universities near Arezzo. At Rondine, as part of the introduction to the program, all the students learn Italian together, which is the “official language” of the Rondine campus. Students also participate in workshops and discussions throughout their time at Rondine, but take their classes and pursue their degrees at partner universities.
